  • 1 tsp baking powder

  • 2 tsp ground cinnamon

  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 1/2 cups chopped apples (Honeycrisp, Gala, Fuji, or Granny Smith recommended)
  • 1 tbsp flour (for tossing apples)

  • Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg (if using). Set aside.
  • In a large bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil (or melted butter), and vanilla extract until well combined and light.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  • In a separate small bowl, toss the chopped apples with 1 tablespoon of flour until lightly coated. This helps prevent them from sinking.
  • Gently fold the floured apples into the batter.
  • Pour the batter into the prepared loaf pan, spreading it evenly. Optionally, sprinkle extra cinnamon sugar on top.
  • Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean. If the top browns too quickly, loosely tent with aluminum foil.
  • Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
