  • 1 cup packed brown sugar
  • 2 ½ tablespoons ground cinnamon
  • ⅓ cup softened butter
  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt

  • Instructions

  • Activate the yeast: In the bowl of a stand mixer, whisk together the warm milk, sugar, and melted butter. Sprinkle the yeast over the top and let it sit for 5-10 minutes until it becomes foamy.
  • Make the dough: Using the dough hook attachment, add the eggs, salt, and 5 cups of flour to the yeast mixture. Mix on low speed until combined. Gradually add the remaining flour, ¼ cup at a time, until the dough pulls away from the sides of the bowl.
  • First rise: Place the dough in a greased bowl, turn it over to coat, and cover with a clean kitchen towel. Let it rise in a warm, draft-free place for about 1 hour, or until doubled in size.
  • Roll it out: Punch the dough down and turn it out onto a floured surface. Roll it into a 16×21 inch rectangle.
  • Add the filling: Spread the softened butter over the dough. In a small bowl, mix the brown sugar and cinnamon together, then sprinkle it evenly over the buttered dough.
  • Roll it up: Carefully roll the dough tightly into a log, starting from the longer side. Use a sharp knife or piece of dental floss to cut the log into 12 equal slices.
  • Second rise: Place the rolls cut-side up in a greased 9×13 inch baking pan. Cover and let rise again for another 30 minutes. Preheat your oven to 350°F (175°C) during the last 15 minutes of this rise.
  • Bake: Bake for 20-25 minutes, or until the rolls are lightly golden brown on top. While they bake, make the frosting by beating all the ingredients together until smooth.
  • Frost & serve: Let the rolls cool in the pan for about 10 minutes before slathering them with the cream cheese frosting. Serve warm.
