Instructions

  • Preheat your oven to 400°F (200°C). Arrange your baguette slices in a single layer on a baking sheet. Lightly brush or drizzle both sides with olive oil. Bake for about 6-8 minutes, flipping halfway through, until they’re golden and crisp around the edges.
  • While the bread toasts, make your tomato topping. In a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, 1 tbsp of olive oil, and balsamic vinegar. Gently toss everything together. Season generously with salt and pepper.
  • Once the bread is out of the oven, take that extra clove of garlic and gently rub the top of each warm slice. This little chef’s trick gives an incredible, fragrant garlic flavor that’s not too overpowering.
  • Spoon a generous amount of the tomato mixture onto each piece of toast. If you’re feeling fancy, top with a sprinkle of shaved Parmesan cheese and an extra little drizzle of balsamic or olive oil. Serve immediately and watch them disappear!
