4 medium-sized sweet potatoes
2 tablespoons olive oil or coconut oil
Pinch of salt
2 tablespoons butter, divided
2 firm, crisp apples (e.g., Honeycrisp or Granny Smith), peeled, cored, and diced
1 cup fresh cranberries
2–3 tablespoons brown sugar, divided (or to taste)
1 teaspoon ground cinnamon
Pinch of nutmeg
1–2 tablespoons milk or cream (dairy or non-dairy)
Optional: splash of orange juice or zest, dash of ginger or allspice, chopped pecans or walnuts for garnish
Instructions
Preheat oven to 400°F (200°C). Wash and scrub each sweet potato. Pierce each potato several times with a fork. Lightly rub skins with olive oil/coconut oil and a sprinkle of salt. Place on a baking sheet and roast for 45-60 minutes, or until fork-tender. Remove from oven and let cool slightly.
Slice each cooled sweet potato in half lengthwise. Gently scoop out the tender flesh, leaving a thin border inside the skin. Place scooped flesh in a large mixing bowl. Add remaining 1 tablespoon butter, a splash of milk/cream, and optional extra brown sugar. Mash until smooth or slightly lumpy.
Gently fold the cranberry apple medley into the mashed sweet potato mixture until evenly distributed. Carefully spoon the filling back into the reserved sweet potato skins, mounding it slightly above the edges. Arrange filled halves back on the baking sheet.
Preheat oven to 375°F (190°C). Bake filled sweet potato halves for 20-25 minutes, or until heated through and tops are lightly caramelized and golden. For crispier topping, sprinkle extra brown sugar or chopped pecans during the last 10 minutes. Remove and let rest a few minutes before serving.
