- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1 (16-ounce) package shelf-stable gnocchi
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C). In a large, oven-safe skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 3-4 minutes. Stir in the garlic and cook for another minute until fragrant.
- Pour in the heavy cream and broth, then add the Italian seasoning, salt, and pepper. Let the mixture simmer gently for 2-3 minutes.
- Stir in the uncooked gnocchi, making sure each piece is coated in the creamy sauce. Let it simmer for another 2 minutes.
- Remove the skillet from the heat. Stir in half of the mozzarella cheese and all of the Parmesan cheese until they start to melt into the sauce.
- Sprinkle the remaining mozzarella cheese evenly over the top. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the sauce is bubbly and the cheese on top is golden brown.
- Carefully remove the skillet from the oven. Let it sit for 2-3 minutes before garnishing with fresh parsley and serving.
