  • 1 package (about 30 cookies) Gluten-Free Chocolate Sandwich Cookies
  • 5 tablespoons unsalted butter, melted
  • 24 oz (three 8-oz blocks) full-fat cream cheese, softened to room temperature
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, cold
  • 12 Gluten-Free Chocolate Sandwich Cookies, roughly chopped

  • Make the Crust: Place the entire package of gluten-free cookies in a food processor. Pulse until you have fine crumbs. Transfer the crumbs to a medium bowl and stir in the melted butter until the mixture resembles wet sand.
  • Press the Crust: Pour the crumb mixture into a 9-inch springform pan. Press the crumbs firmly and evenly into the bottom and about halfway up the sides of the pan. Place the pan in the freezer for 15 minutes to set.
  • Start the Filling: In a large bowl, beat the softened cream cheese and sugar together until completely smooth and no lumps remain, about 2-3 minutes. Scrape down the sides of the bowl and beat in the vanilla extract.
  • Whip the Cream: In a separate, clean bowl, beat the cold heavy whipping cream until stiff peaks form.
  • Combine: Gently fold the whipped cream into the cream cheese mixture until no white streaks remain. Then, gently fold in the 12 chopped gluten-free cookies.
  • Assemble: Remove the crust from the freezer. Pour the filling into the crust and spread it out into an even layer. Tap the pan gently on the counter a few times to release any air bubbles.
  • Chill: Cover the pan with plastic wrap and refrigerate for at least 6 hours, but preferably overnight, to allow it to set completely.
  • Serve: Just before serving, run a thin knife around the edge of the pan before releasing the springform clasp. Garnish with additional cookie crumbs or whole cookies. Slice and serve.
