Instructions

  • First, unwrap your mozzarella string cheese sticks. It’s crucial they are completely frozen for this recipe to prevent a major meltdown in the oil. Set up three shallow bowls. In the first, place the gluten-free flour. In the second, whisk together the eggs and water. In the third, combine the gluten-free panko, Parmesan cheese, Italian seasoning, garlic powder, and paprika.
  • Working with one frozen cheese stick at a time, dredge it in the flour, shaking off any excess. Next, dip it into the egg wash, making sure it’s fully coated. Finally, roll it in the panko mixture, pressing gently to help the crumbs adhere. For an extra-thick, crispy coating, dip the stick back into the egg wash and then into the panko mixture a second time. Place the coated stick on a plate or baking sheet.
  • Once all the sticks are coated, place the entire plate or sheet into the freezer for at least 20-30 minutes. This second freeze is the secret weapon! It solidifies the coating, guaranteeing a crispy exterior and a controlled, melty center when fried.
