1.5 lbs boneless, skinless chicken breasts or thighs
4 cups fresh broccoli florets
1 yellow onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 can (10.5 oz) cream of chicken soup
2 cups milk
1 lb Velveeta cheese, cubed
1 tsp paprika
1 tsp garlic powder
1/2 tsp black pepper
Place chicken in the bottom of the slow cooker.
Add chopped onion, minced garlic, paprika, garlic powder, and black pepper.
Pour in chicken broth and cream of chicken soup. Stir gently to combine.
Cover and cook on low for 6-7 hours or on high for 3-4 hours.
Remove chicken, shred with two forks, and return to the pot.
Add broccoli florets and milk. Cook for another 30-45 minutes.
Add cubed Velveeta cheese. Stir until melted and smooth.
Serve hot with desired toppings.
