Ingredients

Scale
  • For the Cookie Dough:
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • For the Cinnamon Streusel:
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup all-purpose flour
  • 2 tablespoons unsalted butter, melted
  • For the Simple Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk or heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  • Start by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  • Beat in the eggs, one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Gently fold in the sour cream. The dough will be thick and soft.
  • In a small bowl, mix the brown sugar, cinnamon, and flour for the streusel. Pour in the melted butter and stir until the mixture resembles coarse crumbs.
  • Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheets. Make a small indentation in the center of each dough ball and sprinkle a generous amount of the cinnamon streusel into the center.
  • Bake for 10-12 minutes, or until the edges are just starting to turn golden brown. The centers might seem a little soft; they will set as they cool.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Once cool, whisk together the glaze ingredients and drizzle it over the top of each cookie.

Notes

These cookies capture all the magic of a classic coffee cake—the tender crumb, the buttery streusel, the sweet glaze—in one perfectly portable, delicious cookie.
