Ingredients

  • 1 cup yellow cornmeal
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder

  • 1 large egg
  • 1 cup milk
  • 8 hot dogs
  • 8 wooden skewers
  • Vegetable oil, for frying

Instructions

  • Pat your hot dogs completely dry with a paper towel. Insert a skewer into each hot dog, pushing it about halfway through.
  • In a medium bowl, whisk together the gluten-free flour, cornmeal, sugar, baking powder, and salt.
  • In another bowl, beat the egg and milk together. Pour the wet ingredients into the dry ingredients and stir until you have a smooth, thick batter. Pour the batter into a tall drinking glass.
  • Pour about 3 inches of oil into a heavy-bottomed pot or Dutch oven. Heat over medium heat until it reaches 350°F (175°C).
  • Working with one dog at a time, dip it into the batter in the glass, swirling it to coat completely. Let any excess drip off.
  • Carefully lower the battered dog into the hot oil. Fry for 2-3 minutes, turning occasionally, until the coating is a deep, golden brown.
  • Use a slotted spoon to transfer the corn dogs to a paper towel-lined plate to drain. Let them cool for just a minute before serving.
