Instructions

  • Brown the Meat: Heat the olive oil in a large skillet over medium-high heat. Add the ground pork and diced onion. Cook, breaking up the meat with your spoon, until the pork is cooked through and the onion is softened, about 5-7 minutes.
  • Add the Aromatics: Stir in the minced garlic and grated ginger. Cook for just one minute more until incredibly fragrant. Be careful not to burn the garlic!
  • Wilt the Veggies: Add the entire bag of coleslaw mix to the skillet. Toss everything together and cook for 3-5 minutes, until the cabbage has wilted slightly but still has a bit of crunch.
  • Create the Sauce: Pour in the soy sauce, sesame oil, and Sriracha (if using). Stir well to coat all the ingredients evenly. Let it cook for another 2 minutes so the flavors can meld together beautifully.
  • Serve and Enjoy: Remove the skillet from the heat. Top with your sliced green onions and serve immediately. It’s delicious on its own or over a bed of rice or cauliflower rice for a more complete meal.
