- For the Donuts:
- 1 cup (140g) 1:1 gluten-free flour blend (with xanthan gum)
- 1/3 cup (65g) granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup milk (dairy or unsweetened almond milk)
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon vanilla extract
- For the Vanilla Pastry Cream:
- 1 cup whole milk
- 1 large egg yolk
- 3 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- For the Chocolate Glaze:
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- 1 tablespoon light corn syrup
Instructions
- Heat milk in a saucepan until steaming. In a bowl, whisk egg yolk, sugar, and cornstarch. Temper the egg mixture with a little hot milk, then combine everything in the saucepan. Cook over medium-low heat, whisking constantly, until thickened. Remove from heat, stir in butter and vanilla. Cover with plastic wrap and chill for at least 30 minutes.
- Whisk together gluten-free flour, sugar, baking powder, and salt in a large bowl. In another bowl, whisk milk, egg, melted butter, and vanilla. Pour wet ingredients into dry ingredients and stir until just combined.
- Spoon batter into a greased donut pan, filling each cavity 2/3 full. Air fry at 350°F (175°C) for 8-10 minutes until golden and springy. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Spoon chilled pastry cream into a piping bag. Poke a hole in each cooled donut and pipe in the cream. For the glaze, melt chocolate chips, heavy cream, and corn syrup together until smooth. Dip the top of each filled donut into the glaze and let set on a rack.
