1 lb flank steak, sirloin, or skirt steak, thinly sliced against the grain
1 head broccoli, cut into bite-sized florets
1 tablespoon high-smoke-point oil (avocado or grapeseed)
For the Sauce:
1/2 cup gluten-free tamari
2 tablespoons rice vinegar
1 tablespoon honey or maple syrup
1 tablespoon fresh ginger, minced
2 cloves garlic, minced
1 tablespoon cornstarch or arrowroot powder
1 tablespoon cold water (for slurry)
Optional Garnish: sesame seeds, green onions, red pepper flakes
Instructions
Thinly slice the beef against the grain and pat dry. Season with a pinch of salt and pepper, or marinate in a small portion of tamari and cornstarch for extra tenderness.
Wash and cut the broccoli into bite-sized florets. Briefly blanch or steam the broccoli for 2-3 minutes until bright green and crisp-tender. Drain and set aside.
In a bowl, whisk together the gluten-free tamari, rice vinegar, honey (or maple syrup), minced ginger, and minced garlic. In a separate small bowl, combine the cornstarch (or arrowroot powder) with cold water to make a slurry; set aside.
Heat a wok or large skillet over medium-high heat until hot. Add 1 tablespoon of high-smoke-point oil. Add the beef in batches, searing for 1-2 minutes per side until browned. Do not overcrowd the pan. Remove the beef from the pan and set aside.
If needed, add another drizzle of oil to the hot pan. Add the blanched broccoli and stir-fry for 1-2 minutes until heated through and slightly tender. Avoid overcooking.
Return the seared beef to the pan with the broccoli. Give everything a quick toss to mix. Whisk the cornstarch slurry again, then pour the prepared gluten-free sauce into the pan. Stir constantly for 1-2 minutes until the sauce thickens and coats the beef and broccoli evenly.
Remove from heat immediately. Garnish with sesame seeds and chopped green onions if desired. Serve hot with steamed rice, cauliflower rice, or your favorite stir-fry side dishes.
