  • 2 cups miniature marshmallows
  • 1/2 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 2 1/2 cups chow mein noodles
  • 1 cup chopped pecans
  • 1 bag of candy-coated chocolate eggs
  • Instructions

  • In a large, microwave-safe bowl, combine the chocolate chips, marshmallows, and peanut butter. Heat in the microwave in 30-second intervals, stirring well after each burst, until the mixture is completely smooth and melted (about 90 seconds total). Stir in the vanilla extract.
  • Gently fold the chow mein noodles and chopped pecans into the melted chocolate mixture with a spatula until everything is evenly coated.
  • Drop heaping tablespoonfuls of the mixture onto a baking sheet lined with parchment paper. Use the back of a spoon or your fingers to press down the center of each mound to create a nest-like indentation.
  • While the mixture is still soft, press three or four candy eggs into the center of each nest. Refrigerate the baking sheet for at least 30 minutes, or until the cookies are firm.
