- 2 cups fresh or frozen blueberries

- 2 teaspoons cornstarch
Instructions
- Make the Dough: In a large bowl, whisk together the gluten-free flour, sugar, and salt. Add the cold, cubed butter. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
- Add Water: Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough just comes together. Gently knead the dough a few times until it forms a cohesive ball. Divide it in half, shape into discs, wrap in plastic, and chill for at least 30 minutes.
- Prepare the Filling: In a saucepan, combine the blueberries, sugar, lemon juice, and zest. Cook over medium heat for 5-7 minutes until the blueberries begin to burst. Mix the cornstarch with a tablespoon of water to create a slurry. Stir this into the blueberry mixture and cook for another minute until thickened. Remove from heat and let it cool completely.
- Assemble the Handpies: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. On a floured surface, roll one disc of dough out to about ⅛-inch thickness. Cut out 5-6 inch circles. Spoon 1-2 tablespoons of the cooled blueberry filling onto one half of each circle, leaving a border.
- Seal and Bake: Fold the other half of the dough over the filling to create a half-moon shape. Use a fork to crimp the edges tightly. Transfer to the baking sheet. Whisk the egg with a teaspoon of water and brush it over the tops. Cut a small slit in the top of each one.
- Bake to Golden Perfection: Bake for 20-25 minutes, or until the handpies are a beautiful golden brown. Let them cool on the baking sheet for at least 10 minutes before serving.
