  • ¾ cup coconut sugar
  • 2 large eggs
  • â…“ cup avocado oil
  • ½ cup unsweetened applesauce
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups finely grated carrots
  • ½ cup crushed pineapple, drained
  • ½ cup chopped walnuts or pecans (optional)
  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • Instructions

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease them well.
  • In a large bowl, whisk together the gluten-free flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  • In a separate medium bowl, whisk the coconut sugar, eggs, oil, applesauce, and vanilla until smooth and well combined.
  • Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Be careful not to overmix.
  • Fold in the grated carrots, drained pineapple, and nuts (if using) until everything is evenly distributed.
  • Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely before frosting.
  • Make the Frosting: While the muffins cool, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, vanilla, and salt, and beat until creamy. Spread or pipe onto the completely cooled muffins.
