  • 3 large very ripe bananas
  • 2 large eggs
  • 1/3 cup melted coconut oil
  • 1/3 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free 1:1 baking flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips
  • Instructions

  • Preheat oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  • In a large bowl, mash the bananas with a fork until mostly smooth.
  • Whisk in the eggs, melted coconut oil, maple syrup, and vanilla extract until combined.
  • Sprinkle the gluten-free flour, baking soda, cinnamon, and salt over the wet ingredients.
  • Gently fold the dry ingredients into the wet until no dry flour remains. Do not overmix.
  • Fold in the chocolate chips.
  • Pour the batter into the prepared loaf pan and smooth the top. Add extra chocolate chips on top if desired.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Let the bread cool in the pan for at least 20 minutes before transferring to a wire rack to cool completely.
