Instructions
Make the dough: In a standard-sized microwave-safe mug, whisk together the gluten-free flour, sugar, baking powder, and salt. Add in the almond milk, melted coconut oil, and vanilla extract. Stir until just combined and a soft dough forms. Don’t overmix!
Create the swirl: In a tiny separate bowl (or just use a spoon), mix together the ingredients for the cinnamon swirl: the sugar, cinnamon, and oil. It will look like a wet, sandy paste. Drop this mixture right on top of your mug dough.
Swirl it up!: Use a knife or a toothpick to gently swirl the cinnamon mixture down into the dough. You don’t want to fully mix it in—just create beautiful marbled streaks.
Microwave: Pop the mug into the microwave and cook on high for about 60-90 seconds. Start checking at 60 seconds; the top should look set and dry. It will be soft and springy to the touch.
Glaze and devour: While your cinnamon roll is cooling for a minute (if you can wait!), whisk together the glaze ingredients until smooth. Drizzle it all over the warm mug cake and dig in right from the mug!
