  • Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the shredded coconut, coconut sugar, and sea salt. Stir with a whisk to break up any clumps.
  • In a separate small bowl, lightly beat the eggs. Then, add the melted coconut oil and vanilla extract and whisk until combined.
  • Pour the wet ingredients into the dry ingredients. Use a spatula to mix until a thick, cohesive dough forms.
  • Scoop out heaping tablespoons of the dough. Use your hands to firmly press and roll them into balls. Place them on the baking sheet and gently flatten each ball to about a ½-inch thickness.
  • Bake for 12-15 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for at least 10 minutes before transferring them to a wire rack to cool completely.
