  • 3 cups old-fashioned rolled oats (certified gluten-free)
  • 1 cup raw pecans, roughly chopped
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 large egg white, lightly beaten
  • 1/2 cup dried cranberries or cherries
  • Instructions

  • Preheat your oven to 300°F (150°C). Line a large, rimmed baking sheet with parchment paper.
  • In a large bowl, combine the rolled oats, chopped pecans, pumpkin seeds, shredded coconut, cinnamon, and salt. Stir until everything is well mixed.
  • In a smaller bowl or a liquid measuring cup, whisk together the maple syrup, melted coconut oil, and vanilla extract until fully combined.
  • Pour the wet ingredients over the dry ingredients. Stir thoroughly with a spatula until every oat and nut is lightly coated. For clumps, stir in the lightly beaten egg white.
  • Spread the granola mixture evenly onto your prepared baking sheet, pressing it down gently with the back of your spatula. Bake for 35-45 minutes, rotating the pan halfway through, until golden brown. Do not stir during baking.
  • Remove the pan from the oven and let the granola cool completely on the baking sheet. Once cool, break it into pieces and stir in the dried cranberries.
