- 4 tablespoons unsalted butter
- 1/4 cup finely chopped yellow onion
- 2 cloves garlic, minced
- 1/4 cup cornstarch
- 4 cups chicken or turkey broth, divided
- 1 tablespoon gluten-free tamari or coconut aminos
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- Salt, to taste
Instructions
- In a medium saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened and translucent, about 3-4 minutes. Add the garlic and cook for another 30 seconds until fragrant.
- In a small bowl or liquid measuring cup, whisk together the cornstarch with 1 cup of the cold broth until it’s completely smooth and no lumps remain. This is your slurry—the key to lump-free gravy!
- Pour the remaining 3 cups of broth into the saucepan with the onions and garlic. Add the tamari, thyme, and pepper. Bring the mixture to a gentle simmer.
- While whisking constantly, slowly stream the cornstarch slurry into the simmering broth. Continue to whisk as the gravy thickens, which should happen within 1-2 minutes.
- Once thickened, reduce the heat to low. Let it simmer for another 2-3 minutes to cook out the starchy taste. Taste and season with salt only if needed (the broth and tamari are already salty!).
