  • 2 cups (280g) gluten free all-purpose flour blend (with xanthan gum)
  • 1 tablespoon instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup warm milk (dairy or unsweetened almond milk)
  • 2 large eggs, at room temperature
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil for the bowl
  • 1 egg yolk
  • 1 tablespoon water
  • Sesame seeds for topping (optional)
  • Instructions

  • In the bowl of a stand mixer, whisk together your gluten free flour, instant yeast, sugar, and salt. Pour in the warm milk and give it a quick stir. Let this mixture sit for about 5-7 minutes.
  • Using the paddle attachment on your mixer, beat in the eggs and melted butter on medium speed until a sticky dough forms, about 2 minutes.
  • Grease a clean bowl with the olive oil and scrape your dough into it. Turn the dough over so it's lightly coated in oil. Cover the bowl with plastic wrap and place it in a warm, draft-free spot to rise for about 60-90 minutes, or until it has just about doubled in size.
  • Once risen, punch the dough down. Turn it out onto a surface lightly dusted with your gluten free flour. Divide the dough into 6 equal pieces.
  • Roll each piece into a smooth ball and then gently flatten it to about 1-inch thick. Place the shaped buns on a parchment-lined baking sheet, spacing them a few inches apart.
  • Cover the buns loosely with plastic wrap and let them rise again for another 30-45 minutes. Meanwhile, preheat your oven to 375°F (190°C).
  • Gently brush the tops of the buns with the egg wash (mix the yolk with water) and sprinkle with sesame seeds if desired.
  • Bake for 18-22 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  • Let the buns cool completely on a wire rack before slicing and serving.
