  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup Andes mint baking pieces (optional)
  • Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla and peppermint extracts.
  • Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until a thick dough forms.
  • Fold in the chocolate chips and optional mint pieces with a spatula.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each.
  • Bake for 10-12 minutes. The cookies will look soft in the center. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
