  • 1 1/2 cups (210g) gluten-free 1:1 baking flour blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk, at room temperature
  • Instructions

  • Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  • Make the pecan topping: In a saucepan, melt 1/4 cup butter. Whisk in brown sugar, maple syrup, and salt. Cook for 1 minute until smooth and bubbly. Pour into prepared pan. Arrange pecan halves in a single layer over caramel.
  • Whisk the dry ingredients: In a medium bowl, whisk together gluten-free flour, baking powder, baking soda, salt, and cinnamon.
  • Cream the butter and sugar: In a large bowl, beat softened butter and granulated sugar with an electric mixer on medium-high until light and fluffy, 2-3 minutes.
  • Add the wet ingredients: Beat in eggs one at a time, then mix in vanilla extract.
  • Combine: With mixer on low, add one third of dry ingredients, then half the buttermilk. Repeat, ending with the last third of flour. Mix just until smooth.
  • Bake: Spoon batter over pecan layer and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  • Cool in pan for 10 minutes. Run a knife around edge, place a serving plate on top, and flip. Remove pan and parchment. Cool for 15-20 minutes before slicing.
