  • 2 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 large eggs, at room temperature
  • 1 cup buttermilk, at room temperature
  • 1/3 cup olive oil
  • 1 cup shredded cheddar cheese
  • 1/3 cup finely diced ham
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • Instructions

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease them well.
  • In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, pepper, and garlic powder.
  • In a separate medium bowl, whisk the eggs, buttermilk, and olive oil until well combined.
  • Pour the wet ingredients into the dry ingredients. Gently stir with a spatula until just combined. A few lumps are perfectly fine.
  • Fold in the shredded cheese, ham (if using), chives, and parsley until evenly distributed.
  • Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  • Bake for 18-22 minutes, or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
