  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon coarse sugar, for sprinkling (optional)

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×9 inch or similar sized baking dish.
  • Make the filling: In a large bowl, gently toss the sliced strawberries with the sugar, lemon juice, vanilla extract, and cornstarch until evenly coated. Pour the mixture into the prepared baking dish.
  • Prepare the topping: In a separate bowl, whisk together the gluten-free flour, sugar, baking powder, and salt. Using a pastry cutter or your fingers, work the cold butter into the flour mixture until it resembles coarse crumbs.
  • Pour in the milk and stir until a soft, slightly sticky dough forms. Drop spoonfuls of the dough evenly over the strawberry filling. It’s okay if it doesn’t cover every inch. Sprinkle with coarse sugar if using.
  • Bake for 35-45 minutes, or until the topping is golden brown and the strawberry filling is bubbling enthusiastically around the edges.
  • Let the cobbler rest for at least 15-20 minutes before serving to allow the juices to thicken. Serve warm, ideally with a scoop of vanilla ice cream.
