1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
4 cups butternut squash, peeled and diced into 1/2-inch cubes
1 tsp chili powder
1/2 tsp cumin
1/4 tsp cinnamon
1/2 cup chicken broth or water
2 cups fresh baby spinach or kale
Salt and black pepper to taste
Instructions
Cook Turkey and Aromatics: Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until no longer pink. Add diced onion and minced garlic, cooking until fragrant and translucent.
Add Spices: Stir in the chili powder, cumin, and cinnamon. Cook for 1 minute to toast the spices.
Add Squash and Liquid: Add the diced butternut squash and pour in the chicken broth or water. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until squash is fork-tender.
