Description

Discover melt-in-your-mouth coffee butter cookies Easy Christmas cookie recipe using simple ingredients Perfect holiday baking idea for your next cookie exchange

Ingredients

Scale
  • 2 sticks unsalted butter, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 tablespoon instant coffee granules or espresso powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • additional powdered sugar, for rolling

Instructions

  • Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until it’s smooth and creamy. This should take about 1-2 minutes. Gradually add the 1/2 cup of powdered sugar and beat until the mixture is light and fluffy.
  • Incorporate the Flavors: Add the instant coffee granules, vanilla extract, and salt to the bowl. Beat again until everything is well combined and the coffee is fully incorporated into the butter mixture.
  • Add the Flour: Gradually add the all-purpose flour to the wet ingredients, mixing on low speed just until the flour disappears and a soft dough forms. Be careful not to overmix.
  • Chill the Dough: Divide the dough in half. Shape each half into a log about 1.5 inches in diameter. Wrap each log tightly in plastic wrap and refrigerate for at least 2 hours, or until firm.
  • Preheat and Prep: When you’re ready to bake, preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper. Place some additional powdered sugar in a shallow bowl.
  • Slice and Coat: Unwrap one dough log at a time. Slice it into 1/4-inch thick rounds. Roll each cookie round in the powdered sugar to coat it lightly on both sides, then place the cookies about 1 inch apart on the prepared baking sheets.
  • Bake to Perfection: Bake for 10-12 minutes, or until the cookies are set and the bottoms are just lightly golden. The tops may still look a little soft, which is perfect.
  • Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. They will firm up as they cool.

Notes
