1 box (15.25 oz) lemon cake mix
1 large egg
1/2 cup (1 stick) unsalted butter, softened
4 oz cream cheese, softened
1 teaspoon lemon extract
1 cup powdered sugar, for rolling
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.
In a large mixing bowl, combine the dry lemon cake mix, softened butter, softened cream cheese, egg, and lemon extract. Use a hand mixer or stand mixer to beat everything together until a soft, sticky dough forms.
Place the powdered sugar in a separate small bowl. Scoop out about 1.5 tablespoons of dough and roll it into a ball. Then, generously roll each ball in the powdered sugar until it's completely coated.
Place the dough balls about 2 inches apart on your prepared baking sheet. Bake for 10-12 minutes. They should still look a little soft and puffy in the center when you take them out.
Let the cookies cool on the baking sheet for at least 5 minutes before transferring them to a wire rack to cool completely.
