  • 1 large avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 clove garlic, minced

  • Cook the quinoa: In a medium saucepan, combine the rinsed quinoa and water (or broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, until the liquid is absorbed. Fluff with a fork and let it cool for a bit.
