  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1 large egg
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese, divided
  • 1 large egg
  • 2 tablespoons fresh basil, chopped
  • 1/4 teaspoon black pepper
  • 1 1/2 cups mixed small tomatoes (cherry, grape), halved
  • 1 tablespoon olive oil
  • Flaky sea salt, for finishing
  • Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9-inch tart pan with a removable bottom.
  • In a medium bowl, whisk together the almond flour, 1/4 cup Parmesan, garlic powder, and salt. Add the cubed cold butter and work it in with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Add the egg and mix until a soft dough forms. Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the bottom with a fork.
  • Bake the crust for 10-12 minutes, or until just starting to turn golden. Let it cool slightly.
  • In a bowl, beat the softened cream cheese until smooth. Add 1/4 cup of the remaining Parmesan, the egg, chopped basil, and black pepper. Mix until well combined and creamy.
  • Spread the creamy filling evenly over the par-baked crust. Arrange the halved tomatoes, cut-side up, over the filling. Drizzle with olive oil and sprinkle with the last 1/4 cup of Parmesan.
  • Bake for 25-30 minutes, or until the filling is set and the tomatoes are soft. Let the tart cool in the pan for at least 15 minutes before slicing.
