Description

  • 2 (14.75 ounce) cans of pink salmon, drained and flaked
  • 1/2 cup finely chopped yellow onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1/4 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil (for frying)

Instructions

  • In a large mixing bowl, gently combine the flaked salmon, onion, bell pepper, flour, egg, Old Bay, garlic powder, and black pepper. Mix just until everything is incorporated. Be careful not to overmix!
  • Using your hands, shape the mixture into 8 evenly-sized patties, about 1/2-inch thick.
  • In a large skillet (a cast-iron skillet works wonderfully here), heat the vegetable oil over medium-high heat.
  • Carefully place the patties in the hot oil. Fry for 3-4 minutes on each side, or until they are golden brown and crispy.
  • Transfer the cooked croquettes to a plate lined with paper towels to drain any excess oil. Serve immediately while they’re hot and crunchy!
