  • 1 lb ground turkey (93% lean works best)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely grated Granny Smith apple
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tsp fresh sage, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups apple cider
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp pure maple syrup
  • 1 tsp fresh thyme leaves
  • 1/2 tsp ground allspice
  • 1 tbsp cornstarch
  • 1 tbsp water

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine all the meatball ingredients. Use your hands to mix everything together just until combined.
  • Roll the mixture into about 20-22 tablespoon-sized balls and place them on the prepared baking sheet.
  • Bake them in the oven for 15-18 minutes, or until they’re cooked through and lightly golden.
  • While the meatballs bake, make the glaze. In a large skillet, combine the apple cider, vinegar, mustard, maple syrup, thyme, and allspice. Bring to a simmer over medium heat.
  • Whisk the cornstarch and water together in a small bowl to make a slurry. Slowly whisk it into the simmering cider mixture. Let it cook for 2-3 minutes, stirring constantly, until the sauce thickens and becomes glossy.
  • Add the baked meatballs to the skillet, gently tossing them in the glaze until they’re beautifully coated. Let them warm through for a minute or two.
  • Garnish with an extra sprinkle of fresh thyme and serve immediately.
