3 large, very ripe bananas (about 1 ½ cups mashed)
2 cups old-fashioned rolled oats
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon fine sea salt
1 cup of your favorite mix-ins (e.g., chocolate chips, chopped nuts, dried fruit)
Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large bowl, mash the bananas until mostly smooth.
Add the maple syrup and vanilla extract to the mashed bananas and stir to combine.
