  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1 tablespoon sweet pickle relish
  • 1/4 teaspoon white vinegar

  • Paprika, for garnish
  • Fresh chives, chopped, for garnish
  • Instructions

  • Place eggs in a single layer in a saucepan and cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, immediately cover the pan and remove from heat. Let sit for 10-12 minutes.
  • Prepare a bowl of ice water. After cooking, transfer eggs directly into the ice bath. Let them cool completely.
  • Gently tap and roll each egg to crackle the shell. Peel under cool running water. Slice each egg in half lengthwise.
  • Remove yolks to a medium bowl. Arrange egg white halves on a platter. Mash yolks into fine crumbs. Add mayonnaise, mustard, relish, vinegar, salt, and pepper. Mix until smooth and creamy.
  • Spoon or pipe the filling into the egg white cups. Sprinkle with paprika and fresh chives for garnish.
