  • 8 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream or additional milk
  • 1/2 cup pure maple syrup
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup almond flour
  • 1/4 cup coconut sugar or brown sugar
  • 1/4 cup cold unsalted butter, cubed
  • 1/2 teaspoon cinnamon
  • Instructions

  • Grease a 9×13 inch baking dish with butter or non-stick spray. Spread the cubed gluten-free bread evenly in the dish.
  • In a large bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla extract, 2 teaspoons cinnamon, nutmeg, and salt until well combined.
  • Pour the egg mixture evenly over the bread cubes. Press down gently with a spatula to ensure all the bread gets soaked. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or ideally overnight.
  • When ready to bake, preheat your oven to 350°F (175°C).
  • Prepare the streusel topping: In a small bowl, combine the almond flour, sugar, and 1/2 teaspoon cinnamon. Use a pastry cutter or your fingers to cut the cold butter into the mixture until it resembles coarse crumbs.
  • Sprinkle the streusel topping evenly over the soaked bread.
  • Bake for 45-55 minutes, or until the top is golden brown and the center is set (no longer jiggly).
  • Let it cool for about 10 minutes before serving. Dust with powdered sugar or drizzle with extra maple syrup!
