3 cups vanilla wafer crumbs (about 45–50 wafers)
1 cup sweetened shredded coconut
1 cup finely chopped pecans
1 teaspoon blue food coloring gel
1 (12 oz) package blue candy melts

Instructions
In a large mixing bowl, beat the softened cream cheese until it's smooth and creamy.
Gradually beat in the powdered sugar, about one cup at a time, until fully combined and smooth.
Stir in the vanilla wafer crumbs, shredded coconut, and chopped pecans. The dough will be thick.
Add the blue food coloring gel, starting with a small amount and adding more until a festive blue hue is achieved.
Cover the bowl and refrigerate the mixture for at least 1-2 hours, or until firm enough to handle.
Use a small cookie scoop or tablespoon to portion the dough. Roll each portion into a 1-inch ball and place on a parchment-lined baking sheet. Refrigerate for another 30 minutes.
Melt the blue candy melts according to package directions. Using a fork, dip each chilled truffle ball, letting excess coating drip off.
Place the dipped truffle back onto the parchment paper and immediately sprinkle with blue sanding sugar and white nonpareils.
Allow the coating to fully set at room temperature or in the refrigerator for 15 minutes.
