  • 1 cup finely chopped pecans
  • 1 teaspoon blue food coloring gel
  • 1 (12 oz) package blue candy melts
  • Blue sanding sugar and white nonpareils for decorating
  • Instructions

  • In a large mixing bowl, beat the softened cream cheese until it's smooth and creamy.
  • Gradually beat in the powdered sugar, about one cup at a time, until fully combined and smooth.
  • Stir in the vanilla wafer crumbs, shredded coconut, and chopped pecans. The dough will be thick.
  • Add the blue food coloring gel, starting with a small amount and adding more until a festive blue hue is achieved.
  • Cover the bowl and refrigerate the mixture for at least 1-2 hours, or until firm enough to handle.
  • Use a small cookie scoop or tablespoon to portion the dough. Roll each portion into a 1-inch ball and place on a parchment-lined baking sheet. Refrigerate for another 30 minutes.
  • Melt the blue candy melts according to package directions. Using a fork, dip each chilled truffle ball, letting excess coating drip off.
  • Place the dipped truffle back onto the parchment paper and immediately sprinkle with blue sanding sugar and white nonpareils.
  • Allow the coating to fully set at room temperature or in the refrigerator for 15 minutes.
