Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 small shallot, minced (about 2 tablespoons)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • In a medium-sized bowl, whisk together the fresh lemon juice, apple cider vinegar, honey, and Dijon mustard until the honey is fully dissolved and the mixture is smooth.
  • While whisking constantly, slowly drizzle in the extra virgin olive oil. Keep whisking until the dressing is smooth and slightly thickened.
  • Stir in the minced shallot, garlic, fresh parsley, and dill. Season with salt and pepper. Taste and adjust seasoning if needed.
