Ingredients

  • Graham crackers (for crust)
  • Butter, cold (for crust)
  • Sugar (for crust)
  • Cream cheese, room temperature (for filling)
  • Sugar (for filling)
  • Eggs (for filling)
  • Vanilla extract (for filling)
  • Apples (e.g., Granny Smith, Honeycrisp, or Fuji)
  • Brown sugar (for apple topping)
  • Flour (for apple topping)
  • Cinnamon (for apple topping)
  • Nutmeg (for apple topping)
  • Caramel sauce (for drizzling)
  • Pecans or walnuts, chopped (optional, for garnish)
  • Instructions

  • Preheat oven to 350°F (175°C). Prepare a 9×13 inch baking pan by lining it with parchment paper.
  • Make the crust: Pulse graham crackers into fine crumbs. Mix with melted butter and sugar until it resembles wet sand. Press firmly into the bottom of the pan. Pre-bake for 10 minutes, then let cool.
  • Make the cheesecake filling: Beat room-temperature cream cheese with sugar until smooth. Add eggs one at a time, then vanilla, mixing just until combined. Pour over the cooled crust.
  • Prepare the apple topping: Peel and chop apples. Toss with brown sugar, flour, cinnamon, and nutmeg. Scatter evenly over the cheesecake layer.
  • Bake for 45-50 minutes, until edges are set but the center still has a slight jiggle. Cool completely on a wire rack.
  • Refrigerate for at least 4 hours, or overnight, to set completely.
  • Lift the bars from the pan using the parchment paper. Slice into squares. Drizzle with caramel sauce and sprinkle with nuts just before serving.
