  • 1 pound lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 12 stand-and-stuff style taco shells
  • 1 can (16 oz) refried beans
  • 2 cups shredded cheddar cheese, divided
  • Your favorite toppings: shredded lettuce, diced tomatoes, sour cream, etc.

Instructions

  • Preheat your oven to 375°F (190°C). Arrange the taco shells upright in a 9×13 inch baking dish.
  • In a large skillet over medium-high heat, cook the ground beef until browned and crumbled. Drain off any excess grease.
  • Stir in the taco seasoning and water. Let it simmer for a few minutes until the sauce thickens slightly.
  • In a separate bowl, mix the refried beans with 1 cup of the shredded cheddar cheese.
  • Assemble: Spread a layer of the bean and cheese mixture into the bottom of each taco shell. Top with the seasoned ground beef. Sprinkle the remaining 1 cup of cheese over the top.
  • Bake for 10-15 minutes, or until the cheese is completely melted and bubbly and the edges of the shells are lightly golden.
  • Carefully remove the pan from the oven and let it cool for about 5 minutes. Add your favorite fresh toppings and serve.
