Cowboy butter pasta meets chicken in a creamy one-pan recipe. This quick meal uses a simple skillet tech for easy weeknight cooking.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp crushed red pepper flakes (adjust for spice preference)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz fettuccine or linguine pasta, broken in half
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tbsp fresh parsley, chopped

Instructions

  • Season the chicken pieces generously with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  • In the same skillet, melt the butter. Add the minced garlic, smoked paprika, and red pepper flakes. Cook for about 1 minute, until fragrant.
  • Pour in the chicken broth and heavy cream, and give it a good stir. Add the broken pasta to the skillet, making sure it’s mostly submerged in the liquid.
  • Bring the mixture to a simmer, then reduce the heat to medium-low. Cover and let it cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed much of the liquid.
  • Stir the cooked chicken back into the skillet. Add the Parmesan cheese and stir until the sauce becomes creamy and coats everything beautifully.
  • Taste and adjust seasoning with more salt or pepper if needed. Garnish with fresh parsley and an extra sprinkle of Parmesan before serving.
