  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots mix
  • 8 ounces rotini pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  • Heat 1 tablespoon olive oil in a large skillet. Add cubed chicken, season with salt and pepper, and cook until done, 6-8 minutes. Remove and set aside.
  • In the same skillet, add diced onion and cook until soft, 3-4 minutes. Add minced garlic and cook for 1 more minute.
  • Add frozen peas and carrots, 8 ounces of uncooked rotini pasta, 3 cups chicken broth, 1 cup heavy cream, and 1 teaspoon dried thyme. Stir well.
  • Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
  • Stir the cooked chicken back into the pasta. Heat through for 2 minutes. Adjust seasoning with salt and pepper if needed. Serve immediately.
