  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (1 oz) packet ranch seasoning mix
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (8 oz) block cream cheese, full-fat
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese (optional)
  • Salt and black pepper to taste
  • Instructions

  • Place the chicken at the bottom of the slow cooker insert. Season lightly with salt and pepper.
  • In a medium bowl, whisk together the cream of chicken soup, ranch seasoning, and chicken broth.
  • Pour the soup mixture evenly over the chicken in the slow cooker.
  • Place the entire block of cream cheese on top of the chicken and sauce. Do not stir.
  • Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is tender and cooked through.
  • About 30 minutes before serving, shred the chicken in the pot with two forks.
  • Stir the shredded chicken into the sauce until well combined. If using, stir in the shredded cheddar cheese until melted.
  • If the sauce is too thick, stir in an additional splash of chicken broth to reach the desired consistency. Serve hot.
