  • 1 loaf (16 ounces) French or Brioche bread, sliced into 1-inch thick pieces
  • 6 large eggs
  • 1 ½ cups heavy cream
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted

Instructions

  • Pour the melted butter into a 9×13 inch baking dish, making sure it coats the bottom evenly.
  • Carefully place the slices of bread in the dish in a single layer, fitting them snugly together.
  • In a large bowl, whisk together the eggs, heavy cream, milk, vanilla extract, cinnamon, and salt until smooth.
  • Slowly and evenly pour the custard mixture over the bread slices. Press down gently on the bread to help it soak up the custard.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight.
  • Preheat oven to 350°F (175°C). Remove the plastic wrap and bake for 45-50 minutes, until the toast is set and the edges are lightly golden.
  • Remove the dish from the oven and immediately sprinkle the entire surface evenly with the cup of granulated sugar.
  • Using a kitchen torch, carefully caramelize the sugar until it forms a deep golden brown, hard shell. Alternatively, place under the broiler for 1-2 minutes, watching closely.
  • Serve immediately while the sugar topping is crackly and the inside is warm.
