2 tablespoons cornstarch

1 teaspoon ground paprika
1 teaspoon granulated garlic
1 teaspoon salt
1 cup dairy-free buttermilk (or regular buttermilk)
2 cups gluten-free panko breadcrumbs
3 cups frying oil (sunflower, canola, or avocado oil)

Instructions

Combine flour, cornstarch, coriander, paprika, granulated garlic, and salt in a bowl.
Coat chicken cubes in the flour mixture thoroughly.
Dip floured chicken into dairy-free buttermilk until fully coated.
Roll chicken in gluten-free panko breadcrumbs to cover completely.
Heat frying oil in a skillet (or deep fryer) to 350°F (175°C). Fry nuggets in batches until golden and crispy (5-7 minutes per batch). Drain on paper towels.
