  • 4 (6 oz) salmon fillets
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon smoked paprika
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon, cut into wedges

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Pat the salmon fillets completely dry with a paper towel.
  • In a medium bowl, mix together the grated Parmesan, panko, melted butter, mayonnaise, lemon juice, minced garlic, Italian seasoning, salt, and pepper to form a crumbly mixture.
  • Place the salmon fillets on the prepared baking sheet. Divide the Parmesan-panko mixture, pressing it gently onto the top of each salmon fillet.
  • Bake for 12-15 minutes, until the topping is golden brown and the salmon is opaque and flaky. For extra crispiness, broil for the last 1-2 minutes.
  • Let the salmon rest for a couple of minutes. Garnish with fresh parsley and serve immediately with lemon wedges.
