Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with a circle of parchment paper.
  • In a medium bowl, whisk together the gluten-free flour, baking powder, and salt.
  • In a separate larger bowl, use an electric mixer to cream the softened butter and sugar together on medium-high speed for about 2-3 minutes until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Then, mix in the vanilla extract.
  • With the mixer on low speed, add one-third of the dry ingredients, then half of the milk. Repeat, ending with the final third of the flour mixture. Mix until just combined.
  • Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
