A warm, fluffy gluten-free cobbler with tender peach filling and almond flour topping. Easy to make and perfect for summer desserts or family gatherings.

5 large ripe peaches, sliced (peeled if preferred)
2 tablespoons agave nectar
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1 3/4 cups almond flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon pure vanilla extract
1 large egg
1/4 cup date paste
2 tablespoons coconut oil, at room temperature

Instructions

Preheat oven to 375°F (190°C)
Arrange peaches in a 9×13 inch baking pan
Drizzle agave nectar over peaches and sprinkle with cinnamon and cloves
In a bowl, whisk almond flour, salt, and baking powder
Add vanilla, egg, date paste, and coconut oil to dry ingredients
Mix until thick batter forms
Spread topping over fruit mixture
Bake for 40-45 minutes until golden brown

Notes

Agave nectar can be substituted with maple syrup or honey
Date paste substitution: 2 tablespoons mashed dates + 1 tablespoon water
Peel peaches for softer texture
Let cool slightly before serving
