3 cups almond flour
½ cup coconut flour
½ cup + 2 tablespoons coconut oil (melted)
½ cup + 2 tablespoons water
1 teaspoon vanilla extract
1 cup brown sugar
4 teaspoons cinnamon (filling)
4 teaspoons coconut oil (filling)
1 cup powdered sugar
1 tablespoon maple syrup
1 teaspoon cinnamon (icing)
Water (to thin icing)

Instructions

Preheat oven to 350°F (175°C). Line baking sheet with parchment paper
Combine almond flour, coconut flour, melted coconut oil, water, and vanilla extract in a bowl
Mix brown sugar, cinnamon, and melted coconut oil for filling
Scoop 1½-tablespoon dough portions, flatten on baking sheet
Add 1 teaspoon filling to each dough circle, top with another dough piece and seal edges
Bake 17-20 minutes until golden brown
Let cool, then prepare icing by mixing powdered sugar, maple syrup, cinnamon, and enough water to achieve smooth consistency
Drizzle icing over cooled tarts and serve

Notes

Store in an airtight container for up to 3 days
Add toppings like chopped nuts or chocolate sprinkles for extra flair
For softer tarts, reduce baking time by 2-3 minutes
